Its familiar and most liked food by any Indians in the universe irrespective of where he lives and from where his origin in India.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Basically it contains bolied or parboiled rice with normal long grain rice ,black lentils and about a tea spoon of fenugreek seeds.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">We soak the rice and lentils with fenugreek seeds separately for a minimum of 5-6 hrs.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Then we grind the lentil and rice separately to a fine paste and mix it well by adding adequate salt.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Then we ferment the batter overnight.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>

roast the ingredients (1 to 4) till nice aroma comes out from the ingredients.
Make it into coarse powder in mortar and pestle. Keep it aside.<o:p></o:p></span><br />

to grind the tomatoes into puree. keep

the pan and when it is warm add the mustard seeds. When it crackles add the bay
leaves and curry leaves. During this process let the heat be in medium flame.
Then add the chopped garlic .Before it turns into brown add the onions and sauté
well. When its slightly cooked(transparent) add the ground powder. Now add the
tomato puree and mix well. Now add the chilli powder, corriander powder and
salt. Saute well till the oil separates
and the water from the tomatoes evaporates. It should be like a thick mixture
consistency.<o:p></o:p></span><br />

eggs and pour it on the top of the mixture and scramble the eggs well .Put the flame on slow temperature when the eggs are cooked.</span></div>

Let’s start by cooking the rice vermicelli.<o:p></o:p></div>

Take a big bowl (2 ltrs) of water and put it to boil. Add
oil and salt when it starts boiling.<o:p></o:p></div>

When the water is boiling reduce the flame to very low and
add the rice noodles in it and cover it with lid. The whole pack of noodles
(200 gm.) should be immersed in the water. Put the gas off once the noodles are
dropped inside and covered with lid.<o:p></o:p></div>

Leave it for 3 min .The vermicelli is cooked.<o:p></o:p></div>

As we are preparing two flavors boil 400 gm of vermicelli (200 gm each.)<o:p></o:p></div>

Keep it in water only for five minutes. Leaving for longer
time may make the noodles over cooked.<o:p></o:p></div>

Drain the water in a colander. The vermicelli should not
have any water in it. Then add 3 tbsp of oil on the top of the noodles and stir
it gently in the colander.<o:p></o:p></div>

Leave it till you prepare the different flavor to go with
it.<o:p></o:p></div>

and when it starts to crackle add the chana dal urad dal and when the dal is
slightly colored switch off the gas and add the chillies and curry leaves, then

Now squeeze the juice of a lemon in a small cup and add
required salt to it-let the salt to

kept in the pan.<o:p></o:p></div>

Your Lemon Vermicelli is ready. Garnish with coriander

If you are using the dry coconut powder-then reduce the
flame to low and stir it well for two minutes. Don’t burn the mixture as the
dry coconut powder tends to get fried fast.<o:p></o:p></div>

If you are using freshly grated coconut-Please stir the
mixture in low flame till the moisture evaporates and its slightly dry to look.
When you remove the mixture in a spoon it should look like a powder and not
wet.<o:p></o:p></div>

Once it is done-remove the pan from the stove and allow the
mixture to cool for 5 minutes and add the cooked rice vermicelli.<o:p></o:p></div>

be over cooked. If you take a grain of boiled moong –you should be able to mash
it between your fingers with some effort. Don’t worry if it’s slightly over

<span style="font-size: large;">If you are using moong dal-Just soak the dal for ½ hour and
no need to cook beforehand.<o:p></o:p></span></div>

<span style="font-size: large;">2. Please keep the ginger garlic paste ready.<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">3. Cut the onion, spinach and Mint (Mata) ready.<o:p></o:p></span></div>

<span style="font-size: large;">Let’s start cooking.<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">Place the pan in medium flame and pour oil in it. When the
oil is warm add the mustard seeds and cumin seeds. When it crackles add the
finely chopped onion and sauté it well.<o:p></o:p></span></div>

<span style="font-size: large;">When its translucent, add the ginger garlic paste and sauté
till the raw flavor goes.<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">Add the green chilies ** (if you don’t have green chilies
please avoid this step)<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">Add curry leaves and sauté till onions are slightly colored.<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">Add haldi (kurkuma powder).<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">Then after mixing add the boiled moong or soaked moong dal
with a pinch of salt.<o:p></o:p></span></div>

<span style="font-size: large;">Cover it with lid.<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-size: large;">It will take two minutes for the moong dal to cook. If you
are using green moong (as it’s already cooked) keep it in the closed pan for 4
minutes.<o:p></o:p></span></div>

<span style="font-size: large;">Now add grated beetroot and close it with lid. As the beet
root are grated it will cook in less than 5 mnts.<o:p></o:p></span></div>

<span style="font-size: large;">Now it’s time to add the greens (spinach and Mint).After
adding the greens, please don’t cover the pan with lid. It will cook in 5 mnts.<o:p></o:p></span></div>

powder if you are not using green chilies)and garam masala powder.<o:p></o:p></span></div>

a big bowl of water to boil and when it reaches the boiling point reduce the
flame and add the washed tomatoes into it. After two minutes switch off the gas
and cover the vessel with a lid. See to it that all the tomatoes are immersed
in the water. Don’t mind if the water is more. Better safe than sorry.<o:p></o:p></span></div>

you can see the skin of tomatoes peeling out .Drain the water and remove the

mixture cook in a medium high flame. When the tomatoes starts to cook and
leaves lot of juices,reduce the flame to medium and stir it well. Allow it cook
till the water evaporates and the mixture gets mushy like a paste.<o:p></o:p></span><br />

thick extract of tamarind juice and stir it occasionally so that the mixture

stage check the salt and the chili level .If you want your dish to be spicier

pickle till the oil oozes out from the sides and there is absolutely no juice

careful while adding the fenugreek powder. Don’t add more as it will give a

takes 30 minutes to cook. It depends on the juice content in the tomatoes. So
